Florida Strawberries Recipe

One of the best times to be in Florida is during the Strawberry season which is February. And one the best places to be is in Plant City. Each year in February Plant City comes alive to welcome guest from all over the world to one of largest festivals in Florida.
The Florida Strawberry Festival is a great time to discover the charm and allure of Plant City, and it’s the perfect time to enjoy eating ripe, luscious strawberries alongside the local berry farmers that have worked hard to bring to them to market. More than 10,000 acres of strawberries are planted annually in the local area. In fact, there are some 2,800 farms in Hillsborough County that produce fruit and vegetable crops with an annual value of over $360 million.

Florida Strawberry Parfait:

2 cups fresh Florida strawberries, rinsed, hulled and sliced
8 ounces low fat cream cheese, whipped
2 tablespoons natural Florida sugar
1/2 cup low fat vanilla yogurt
4 graham crackers, crushed
1 lemon, juiced
 4 sprigs fresh mint for garnish

Directions:

In a medium sized mixing bowl, combine whipped cream cheese, sugar and lemon juice. Fold the yogurt into the cream cheese mixture.  In four wide mouth glasses, evenly layer cream cheese mixture, strawberries and crushed graham crackers. Garnish with sprigs of fresh mint. Serve chilled.
